Origin of Biscotti
Biscotti biscuits originate from Italy, the word Biscotti is derived from two Italian words, ‘bis’ meaning twice and ‘cotto’ meaning baked/ cooked. This method of double baking the biscuits is what gives New Forest Biscotti their unique hardness.
I have always been a keen baker and love making treats for my family and friends, a skill I developed through my work in the catering trade and specialized chef scholarship. New Forest Biscotti was conceived in the spring of 2007 following a characteristically astute comment from my Mother, “Steph, we have so many cafes, so why no good biscuits?!” I researched some recipes and started improvising the flavours, often baking biscotti as gifts for friends. In response to the positive feedback I received I decided to develop the concept further and investigated the market potential of local handmade biscotti.
On a particularly cold November morning in 2008 New Forest Biscotti launched itself on Lymington’s Historic Saturday market. 18 months on and the prize winning Biscotti Empire is flourishing; we now hold 27 recipes (with more in development), carry the prestigious New Forest Marque, hold Hampshire Fare membership and supply the New Forest’s finest farm shops, cafes, restaurants, hotels and B & B’s’.
Twist on tradition
Traditionally Biscotti were predominately almond flavoured, due to the availability of the nut in Italy and its surrounding countries. In present day England however, we are spoilt for choice when it comes to nuts, we have literally gone nuts on flavours. Incorporating Hazelnuts, Macadamia nuts, Walnuts, Brazil nuts, and the old favourite, Almond.
New Forest Biscotti have taken inspiration from a traditional Italian recipe and adapted it to create a variety of tempting, flavours, textures and colours.

New Forest Biscotti are handmade in Lymington and where ever possible we source our ingredients locally, in an aim to reduce our product’s carbon foot print and support the local economy.
